Balsamic Sausage Pepper Sandwiches

I firmly believe that it’s not necessary to get fancy in order to eat well every day. This recipe is easily one of the best and easiest weeknight meals in our family’s repertoire. Start by marinating peppers and onions in balsamic vinegar, olive oil and fresh oregano. Marinate for a few minutes or do this step up to 8 hours ahead of cooking time.

Ready to roast or grill, marinade reserved  Cooked Veggies and Sausage in remaining marinade

Grill or roast the sausage and the vegetables. Since the marinade was only used for the veggies, save it and toss everything in it after the grilling or roasting is complete. Toast some quality crusty rolls, slice the sausages in half lengthwise and load the bread up with meat and veggies. Top it with shredded Italian cheese and broil each sandwich for a couple of minutes to get the cheese bubbly and a tiny bit brown.

Ingredients
  • 2 bell peppers, quartered and seeds discarded
  • 1 small yellow onion, sliced in 1/2 inch rings. Try to keep the rings intact
  • 3 T extra virgin olive oil
  • 3 T balsamic vinegar
  • 2T fresh oregano, minced
  • 1/2 t kosher salt
  • 1/4 t pepper
  • 1 lb Italian sausage links
  • 4 bolillo rolls, sliced in half
  • Shredded Italian cheese
Directions
  • Step 1 Place the peppers and onions in a pie dish. Sprinkle salt and pepper and oregano over everything.
  • Step 2 Pour the oil and vinegar over peppers and onions. Marinate for a few minutes or cover and refrigerate for up to 8 hours. Save the marinade in the pie dish.
  • Step 3 Heat the oven or the grill to 425 degrees F
  • Step 4 Roast or grill the sausages for about 15 to 20 minutes, depending on the cooking method. The grill will cook faster and will need more monitoring.
  • Step 5 When things are finished roasting or grilling, place them back into the pie dish and toss to coat in the vegetable marinade.
  • Step 6 Toast the bread, then top with sausages halved lengthwise, onions and peppers. Finish off with a handful of cheese and broil each sandwich until the cheese is light brown and bubbly.
