It’s late summer and many of us have too many herbs popping off in the garden. If you don’t, it’s OK. Ask a friend, neighbor or coworker if they have fresh herbs in the garden before you buy the expensive stuff in the wasteful packaging.
To make this bumped-up, addictive version of tuna salad, start by draining chunk light tuna in water. Add to it mayonnaise, sweet relish, lemon juice, a generous amount of your favorite fresh herbs, a bit of kosher salt, and ground pepper. Combine everything and adjust the seasonings.
I realize this is probably like – “duh!” But after the start of this school year, dripping with existential dread, I needed something easy, fast, healthy and freaking delicious to get me through the lunch hour. Serve it over an avocado half or on a sandwich.

Herbed Tuna Salad
Herbed Tuna Salad is the answer to the boring tuna conundrum. Shake it up! Try this today on a sandwich or with an avocado.
Ingredients
- 10 oz, canned Chunk Light Tuna in water, drained well
- 1/3 c minced fresh herbs of your choice, try chives, oregano and parsley
- 1/2 c mayonnaise
- 1/4 c sweet relish
- 2 T lemon juice
- 2 t lemon zest, optional
- 1/4 t kosher salt
- 1/4 t freshly ground pepper
Directions
- Step 1 Make sure that the tuna is drained well, pressing out extra water through a strainer. Then combine all ingredients and stir well. Adjust for your particular taste with more mayonnaise, salt and pepper.
- Step 2 Serve on lightly salted avocado halves, on salad greens, on bread or toast, or as a dip for potato chips.
