2020 has been terrible. The holidays this year will be remembered as the time we all spent apart in order to save ourselves from more devastating loss. As we approach Thanksgiving, some folks are altering their recipes and sorting through what to leave off the menu. Others are planning to go all out despite the lack of guests.
I decided to return to the idea of fun mocktails that I can share with my little ones and try to make things feel special. This recipe for Apple Ginger Mock Champagne is super easy. Simply grate fresh ginger on a Microplane and allow it to soak in apple juice for a few hours in the fridge. Then strain out the ginger, add a teaspoon of apple cider vinegar, and fill glasses half full with the juice mixture and half full with bubbly seltzer.

Apple Ginger Mock Champagne
This mock champagne is made from apple juice, fresh ginger, a touch of cider vinegar and bubbly seltzer.
Ingredients
- 1 c apple juice
- 1 inch peeled fresh ginger, grated with a microplane
- 1 t apple cider vinegar
- 1 c bubbly plain seltzer
Directions
- Step 1 Put the fresh ginger into the apple juice and chill for 2 hours or more.
- Step 2 Strain out the ginger and add the cider vinegar to the juice.
- Step 3 Fill two champagne flutes half full with the apple ginger mixture and then top off with seltzer. Float a fresh cranberry on top for fun. Serve immediately.
