Greek Yogurt Roasted Red Pepper Grilled Chicken

There are times in life when we start to question the stagnation of our grilled chicken recipes. Sure, they’re good, but what else could we be doing? Enter the tub of Greek yogurt and that half jar of roasted red peppers that have been taunting you to use them before they go bad. Greek Yogurt Roasted Red Pepper Grilled Chicken is super easy to make and you can marinate it for 24 hours so it makes an easy weeknight meal.

Using a food processor or a blender, liquify the Greek yogurt and the roasted red peppers with some fresh garlic, cumin, paprika, coriander, salt and pepper. Then stir in some sweet pickle relish. What?!

Then, this is very important, RESERVE about a cup of the marinade in a sealed container. This will the the sauce for the chicken.  Pour the rest of the marinade over pre-cut chicken strips or chicken tenders and marinate for 24 hours.

 

When it is time for cooking, coat the grill in nonstick spray before turning it on. Get the grill nice and hot; it can be turned down once the meat has seared nicely. Shake off the marinade from each piece before laying it on the grill. It doesn’t need to be patted dry, but you don’t want that marinade dripping all over the grill either. Both pre-cut chicken strips and chicken tenders grill up quickly, about 4 minutes on each side.

Serve the chicken strips with the reserved marinade, some naan bread, a side salad or in a lettuce wrap. Greek yogurt is a great way to marinate. Also try Buttermilk Sage Chicken.

Reserve part of the marinade as a dipping sauce for this easy and delicious grilled chicken recipe.

Ingredients
  • 3/4 c Greek yogurt
  • 6 oz roasted red peppers, rinsed and drained
  • 1 clove garlic, chopped roughly
  • 1 t cumin
  • 1 t coriander
  • 1 t paprika
  • 3/4 t kosher salt
  • 1/4 t black pepper
  • 1/4 c sweet pickle relish
  • 1 lb pre-cut chicken strips or chicken tenders
Directions
  • Step 1 In a food processor, process the yogurt, roasted red peppers, garlic, cumin, coriander, paprika, salt and pepper until smooth.
  • Step 2 Stir in the sweet relish.
  • Step 3 Reserve 1 c of the marinade in a sealed container in the refrigerator.
  • Step 4 Pour the remaining marinade over the chicken in a resealable bag or in a dish. Toss well and allow to marinate for up to 24 hours.
  • Step 5 Spray the grill with nonstick spray before turning it on. Heat the grill over medium high heat until it is very hot.
  • Step 6 Shake the marinade from each piece of chicken and carefully lay on the grill.
  • Step 7 Turn the heat down to medium low and cook for about 4 minutes on each side with the lid shut until the chicken is cooked through.
  • Step 8 Serve with the reserved marinade, a side salad, naan bread or as a lettuce wrap.
