TL/DR – Homemade Hummus. This is a great basic recipe that can be tweaked. Garlic, lemon, salt, tahini, ice water, garbanzo beans. Easy! Makes a ton! Cheaper and way tastier than store bought!
Over the years I have tried several different recipes for homemade hummus. I’ve soaked and boiled the chickpeas, I’ve used canned, lots of tahini, less tahini, garlic, no garlic, etc. This is the method I use now. That’s the beauty of homemade hummus. Try ideas like adding 1/4 cup of pickle juice instead of water, a delicious variation! With homemade hummus you can go nuts. Just make sure to control the salt content and the food processor is your magical hummus kingdom. Do it!
Why bother to make homemade hummus? Honestly, have you tried store bought? It just has something about it that I don’t like. Homemade hummus has a smoother taste, flavors are controllable, and you get so much more than the small container of store bought hummus!
This recipe starts off by processing garlic, lemon juice and salt in a food processor.
Add tahini, process and it will look separated. But then add ice water one tablespoon at a time and it smooths out.
Finish by adding canned chickpeas, rinsed and drained and process until very, very smooth. Adjust the salt and it’s ready to eat. It keeps for up to a week in the refrigerator.

A quick note on food processors: I use a large one for hummus, but I also have a small one. It might seem like overkill, but the small food processor is extremely handy for things like chimichurri sauce. Check out the Cuisinart Mini Prep.
Homemade Hummus
Ingredients
- 1/2 t kosher salt
- 1 small clove garlic, roughly chopped
- 1/4 c lemon juice
- 1/2 c tahini
- 1/4 c extra virgin olive oil
- 1/2 c ice water
- 2 14.5 oz cans garbanzo beans, rinsed and drained
- salt and pepper to taste
Directions
- Step 1 In a food processor, process the salt, garlic and lemon juice, scraping sides of the processor down once.
- Step 2 Add the tahini and olive oil and process for one minute.
- Step 3 Add ice water, one tablespoon at a time, and process until a smoother consistency emerges.
- Step 4 Add the garbanzo beans and process until your desired smoothness or chunkiness is attained.
- Step 5 Add salt and pepper to taste.
