This apple waffle version is not meant to be ultra healthy, but flaxseed meal and white whole wheat flour certainly increase the fiber content! Take the extra step to cook down more apples in butter and then puree them with pure maple syrup for a topping that feels just a tiny bit better than drowning them in ordinary syrup.
Start by whisking together 2 eggs with brown sugar. (Coconut sugar, lower on the glycemic index, can be subbed.) Follow that with vanilla extract, buttermilk, regular milk and melted butter. (I use whole buttermilk and 2 % milk.)
Add in baking soda, baking powder, salt, cinnamon and nutmeg and whisk it well. Follow that with white whole wheat flour, flaxseed meal and shredded apple. Honey crisp apples work well.
Scoop about 3/4 cup of the batter into a hot waffle iron and cook for about 3 minutes. Every waffle iron is different so make sure you know what you’re working with.
To make the apple butter syrup, peel and slice 3 more honey crisp apples and cook them in a small skillet in 5 tablespoons of butter for about 15 minutes.
In a blender, puree the cooked apples with about 1/2 cup of pure maple syrup, then drizzle this mixture over the warm waffles.
Apple Cinnamon Flax Waffles with Apple Butter Syrup

Ingredients
- 5 to 6 honey crisp apples, divided
- 2 eggs
- 1/2 c brown or coconut sugar
- 3/4 c whole or low fat buttermilk
- 3/4 c whole or 2 % milk
- 9 T butter, divided
- 1 1/2 t vanilla extract
- 2 1/2 t cinnamon, divided
- 1 t baking soda
- 1/2 t baking powder
- 1/2 t salt
- 1/2 t nutmeg
- 1 1/4 c white whole wheat flour
- 1/2 c flaxseed meal
- 1/2 c pure maple syrup
Directions
- Step 1 Remove the core from 2 apples and using a box grater, shred the apples until you have 2 cups of shredded apple. Set this aside.
- Step 2 Melt 4 T of butter and set aside.
- Step 3 Whisk together the eggs and brown sugar in a large bowl until well combined. Add in the buttermilk, milk, the 4 T melted butter and vanilla extract and whisk well.
- Step 4 Add 2 t cinnamon, baking soda, baking powder, salt and nutmeg and whisk until they are incorporated.
- Step 5 Fold in the flour, flaxseed meal and the shredded apple. Stir just until all of the ingredients are incorporated and there is no visible flour.
- Step 6 Using the instructions for your waffle iron, make about 5 whole waffles and set them aside on a wire rack.
- Step 7 While making the waffles, peel an additional 3 or 4 apples, depending on the size, then slice them thinly. Add the remaining 5T butter to a small skillet and heat on high. Add the apples to the skillet and sprinkle the additional 1/2 t cinnamon over the top. Lower the heat to medium and cook the apples, stirring occasionally, for about 15 minutes until they are soft.
- Step 8 Add the cooked apples and all of the melted butter from the skillet to a blender or a food processor along with the maple syrup. Carefully blend the mixture until it is completely smooth and pourable.
- Step 9 Reheat waffles in the oven or the toaster if necessary and serve with the warm apple butter syrup drizzled over the top.
