Salsa Verde Baked Shrimp Dip Ingredients

This dip is everything I crave: creamy, tangy, a tiny bit spicy, textured, warm, easy, and versatile. Eat it with chips, crusty french bread, as a spread for a scrambled egg breakfast sandwich, or with veggies.

Chopped Shrimp, Diced Jalapeno, Minced Garlic

Start by chopping about a pound of cooked, peeled shrimp. This amounts to about 20 cooked cocktail shrimp. Mince one or two jalapeños and 2 or 3 cloves of garlic.

Mix these ingredients with 7 ounces of salsa verde, the juice of one lemon, softened cream cheese, sour cream, mayo and shredded Monterey jack.  Spray a small baking dish and spread the dip inside. Bake it for 20 minutes at 350 degrees F. Remove it from the oven, top it generously with Panko bread crumbs and then broil it on low for about 2 minutes, careful to watch it so it doesn’t get too brown. Serve it immediately.

Ingredients
  • 1 lb cooked shrimp, peeled and chopped
  • 1 c shredded Monterey Jack cheese
  • 1 7 oz can salsa verde, such as Herdez
  • 4 oz cream cheese, softened
  • 1/2 c sour cream
  • 1/4 c mayonnaise
  • 1/3 c jalapeño, minced
  • 2 cloves garlic, minced
  • juice of 1 lemon
  • 1/2 t kosher salt
  • 1/4 t freshly ground black pepper
  • 1 c Panko bread crumbs.
Directions
  • Step 1 Preheat an oven to 350 degrees F.
  • Step 2 Mix all ingredients except for the Panko together in a medium bowl.
  • Step 3 Spray a small baking dish with nonstick spray and pour the mixture into the dish, spreading it evenly with a spatula.
  • Step 4 Bake at 350 for 20 minutes, then remove it from the oven, sprinkle the Panko crumbs evenly over the top and return it to the oven under a low broiler for about 2 minutes or until it is golden brown. Carefully watch as it broils so that it doesn’t burn.
  • Step 5 Serve it immediately with chips, crusty bread or veggies.
