Bacon Egg Noodle Bake

OK so this is one of those things that came to me in a dream. It’s weird, I know. But it’s good and it’s adaptable to a variety of tastes. Try it with some cooked chorizo or Italian sausage instead of bacon. Try it with sautéed mushrooms, onions and peppers for a vegetarian version.

Ingredients  Cooked noodles in baking dish with bacon

Start by cooking very crispy bacon and boiling some egg noodles. The noodles go into the bottom of a 1 1/2 quart baking dish coated in cooking spray. Chop the bacon and sprinkle half of it over the noodles.

Wet mixture ingredients   Eggs, cottage cheese, sour cream, milk, dijon, chives, salt and pepper

Whisk together eggs, milk, cottage cheese, sour cream, dijon mustard, chives, salt and pepper and pour this over the noodles. Then sprinkle on the remaining bacon.

Bake it for about 55 minutes and serve immediately. This is a great recipe in the “breakfast for dinner” category. It works really well with a spinach salad or Lemony Garlicky Broccoli. Also, any of the ingredients, (except for bacon,) can be subbed with the low fat version.

Ingredients
  • 2 c dry egg noodles
  • 4 to 5 strips of bacon
  • 5 eggs
  • 1/2 c milk
  • 1/2 c cottage cheese
  • 1/3 c sour cream
  • 1 to 2T chives, minced
  • 2 T dijon mustard
  • 1/8 t kosher salt
  • 1/8 t pepper
Directions
  • Step 1 Preheat the oven to 325 degrees F.
  • Step 2 Cook the bacon until very crispy.
  • Step 3 As the bacon cooks, boil the egg noodles according to the package directions, usually about 7 minutes. Do not salt the pasta water.
  • Step 4 Spray a 1 1/2 quart baking dish with cooking spray.
  • Step 5 Drain the cooked noodles and spread them evenly along the bottom of the baking dish.
  • Step 6 Chop the cooked bacon and spread half of it evenly over the noodles.
  • Step 7 Whisk together the eggs, milk, cottage cheese, sour cream, chives, dijon, salt and pepper and carefully pour the mixture over the noodles and bacon.
  • Step 8 Sprinkle the remaining chopped bacon over the top.
  • Step 9 Bake at 325 for 50-55 minutes, until the center is set.
  • Step 10 Allow it to cool 10 minutes before serving.
