Easy Tomato Soup

Ingredients

In a jam, I’ve been known to serve tomato soup from a box, which is easy, but this recipe does not take a lot of time to make and it’s so much better. I promise. I’ve included a rich version and a healthy version, both of which are delicious and require very little effort.

Start by sautéing onions and garlic, then add two large cans of diced tomatoes, veggie, chicken or beef broth, and lots of fresh basil and oregano. Simmer for ten minutes, (or more if you have longer.)

An immersion blender is a very useful tool for this soup, (and for lots of soups and sauces.) I highly recommend one. I’ve had a Cuisinart Smart Stick for years now. The other option is to pour the soup into a blender in batches to achieve creamy smoothness. After it has simmered for ten minutes, use the immersion blender on the high setting to blend it until it’s completely smooth, about 2 minutes. Then stir in the cream or whisk in the yogurt and serve immediately with grilled cheese, garlic bread, or toasted sourdough slathered with Artichoke Pinto Bean Dip

This tomato soup is something that can be made ahead and frozen if you omit the cream or yogurt and add when reheating. I also use it as a base for other, soups, like Tomato Wild Rice Soup with Turkey Meatballs.

This soup requires little effort. There is a decadent version and a healthy version listed below.

Ingredients
  • 1T extra virgin olive oil
  • 3 to 4 cloves garlic, minced
  • 1 small onion, diced
  • 2 28 oz cans diced tomatoes
  • 1 c chicken broth
  • 1 c loosely packed fresh basil leaves (or a combo. of fresh oregano and basil)
  • 1 t sugar
  • Salt and pepper, to taste
  • 1/2 cup heavy cream OR 6 oz 2% plain Greek yogurt
Directions
  • Step 1 1. Heat the olive oil in a large pot over medium-high heat.
  • Step 2 2. Add the diced onion and cook, stirring frequently, 4 min.
  • Step 3 3. Add the minced garlic and cook 1 min.
  • Step 4 4. Add the tomatoes, chicken broth, fresh basil and sugar and bring to a simmer.
  • Step 5 5. Simmer 10 minutes.
  • Step 6 6. Blend the soup with an immersion blender, (or in batches in a regular blender, being careful not to splash the hot soup.)
  • Step 7 7. Once the soup is smooth, taste and add salt and pepper to taste. Typically 1/2 t to 1 t salt is sufficient.
  • Step 8 8. Turn off the heat and add either 1/2 cup heavy cream for a decadent soup, or a 6 oz cup of 2% Greek yogurt.
