White Bean Feta Tahini Dip

Recently I tried the the Whipped Feta Dip Recipe from Serious Eats and… oh my! For feta cheese lovers everywhere, if you haven’t tried a version of whipped feta as a dip, you must. Working from this concept, I developed this easy baked dip using feta, white beans and tahini, which makes it creamy. Lemon juice and fresh thyme along with fresh garlic and salt make it extra tangy and totally addicting.

Place all of the ingredients into a food processor and process on high until it is beautifully smooth. Add up to 1/4 cup of ice water as the dip works in the processor to prevent the tahini from making it too thick.

Coat a small baking dish with nonstick spray, then add the processed dip. Bake it at 375 F for about 20 minutes, then serve with any number of dippers. I like to keep it simple with some gluten free french bread sliced thin and toasted, but chips, crudités, or even roasted potatoes are also delicious with this dip.

An easy and healthy baked dip made from white beans, feta, tahini, lemon juice, olive oil, fresh thyme, salt and ice water.

Ingredients
  • 1 14.5 oz can white beans, such as cannellini or great Northern, rinsed and drained
  • 6 oz crumbled feta cheese
  • 1/2 c tahini
  • 3 T lemon juice
  • 2 T extra virgin olive oil
  • 2 T fresh thyme leaves
  • 1 medium clove garlic
  • 1 t kosher salt
  • 1/4 c ice water
Directions
  • Step 1 Preheat the oven to 375 degrees F and coat a small 1 qt baking dish with nonstick spray.
  • Step 2 Place all ingredients except for the ice water in a food processor and process on high until very smooth, about 2 minutes. As it processes, add the ice water a tablespoon at a time. This will help to loosen it up. Stop to scrape down the sides once or twice.
  • Step 3 Pour the dip into the sprayed baking dish, smooth the top and bake for 20 minutes. Allow it to cool for about 10 minutes before serving with French bread toasts, chips, or veggies.
